How to Roll a Sponge Cake
The key to a perfect sponge roll is to roll it immediately after baking so it holds its shape when filled.
Step 1:
Dust a large piece of non-stick baking paper with sugar. Turn the cake onto the paper. Remove the top sheet of paper from the cake.
Step 2:
Starting with the long side closest to you and using the paper as a guide, roll up the cake. Place, seam-side down, on a tray to cool.
Step 3:
Carefully unroll the cake and spread with the filling. Roll up to enclose the filling. Place in the fridge to chill until serving.
