Prawn Rissoles

Ingredients

  • FOR THE DOUGH
  • 420g flour, sieved
  • 1 tbsp margarine
  • 900ml water
  • Salt, to taste
  • FOR THE FILLING
  • 250g prawns, peeled
  • 500ml milk
  • 1 onion, finely chopped
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tbsp nutmeg
  • 25g flour, sieved
  • 1 tbsp margarine
  • 1 sprig of parsley

Method

Step 1

FOR THE DOUGH: Heat a pan with the water, margarine and salt. When it starts boiling add the flour. Stir constantly until the flour mixture forms a ball. Turn off the heat and allow the flour mixture to cool.

Step 2

FOR THE FILLING: Heat a pan with water seasoned with a sprig of parsley. When the water starts boiling add the prawns and cook for about 5 minutes. When the prawns are cooked remove them and set aside on a plate.

Step 3

In another pan combine the milk, flour, nutmeg, pepper, salt and margarine. Set on a low heat and stir with a spoon until creamy.

Step 4

Add the finely chopped onion and cook for another minute. Turn off the heat, then add the prawns and wrap in the flour mixture.

Step 5

When the dough is cooled, roll out on a lightly floured board and cut into small squares. Place small portions of the filling on each square. Fold the square over the filling and cut it into the shape of rissoles with the help of a cup.

Step 6

Coat the rissoles in beaten egg and then in breadcrumbs. Fry in hot oil until golden brown and crisp. Remove from the oil and place on paper towels before transferring to a platter to serve.
