Ingredients
- 125g butter, chopped
- 1⁄2 cup brown sugar
- 1 tsp vanilla essence
- 2 eggs
- 1 cup self-raising flour
- 1⁄2 cup plain flour
- 3⁄4 cup milk
- 2 apples
- icing sugar, to serve
- cream, to serve
Method
Step 1
Preheat oven to 180°C. Grease a 6cm-deep, 20cm (base) round pan. Line the base with baking paper.
Step 2
Place the butter, sugar and vanilla in a bowl. Using an electric mixer, beat for 5 to 6 minutes or until light and creamy. Add the eggs, 1 at a time, beating after each addition.
Step 3
Sift flours over the butter mixture. Add the milk. Fold until just combined. Spoon into the prepared pan. Core and quarter the apples then thinly slice. Arrange the apples in 2 circles on batter, pressing down gently.
Step 4
Bake for 35 to 40 minutes or until a skewer inserted in the centre comes out clean. Stand in the pan for 10 minutes. Remove the side from the pan. Slide cake onto a wire rack to cool.
Step 5
Sprinkle the cake top with icing sugar and serve with cream.
