Ingredients
- 280g plain flour, sifted
- 50g brown sugar
- 1 tbsp baking powder
- 2 tsps ground cinnamon
- 1⁄2 tsp salt
- 2 eggs
- 250ml whole milk
- 250ml apple cider
- 55g butter, melted
- 1 tsp vanilla essence
- 2 apples, grated or finely chopped
- For the topping:
- 2 apples, peeled, cubed or sliced
- 3 tbsps brown sugar
- 1⁄4 tsp ground cinnamon
- 2 tbsps butter
- pecan nuts, to serve
Method
Step 1
In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt. In a separate medium bowl, whisk together eggs, milk, apple cider, butter, and vanilla. Make a well in the flour mixture and pour in the wet ingredients. Stir just until combined and moistened, then fold in the apples. Do not over mix. Heat a pan over medium heat. Coat with cooking spray or oil. Scoop the batter onto the pan using a 1/4 cup for each pancake. Cook until bubbles appear on the top, for about 1 minute. Flip carefully and cook another 1-2 minutes. Repeat this until you finish the batter.
Step 2
For the topping, toss together the apples, sugar, and cinnamon in a bowl. In a medium pan over medium heat, melt the butter. Add the apple mixture to the pan and cook, stirring occasionally, until apples are soft and the sauce has thickened slightly, about 8-10 minutes. Remove from heat and transfer to a bowl. Serve pancakes warm with the apple topping and garnished with pecan nuts.
