Ingredients
- 1 clove garlic
- 2 cups fresh basil
- 1⁄4 cup pine nuts
- 1⁄2 tsp salt
- 1⁄4 tsp freshly ground black pepper
- 1 ripe avocado
- 1 tbsp lemon juice
- 500g cooked pasta
Method
Step 1
Add 1 clove garlic, 2 cups fresh basil, 1⁄4 cup pine nuts, 1⁄2 tsp salt, 1⁄4 tsp freshly ground black pepper, 1 ripe avocado, 1 tbsp lemon juice to a food processor or blender and blend until smooth.
Step 2
Toss with 500g cooked pasta to coat, adding extra pasta cooking water 1 tablespoon at a time if needed to thin out the sauce. Garnish with freshly chopped basil.
