Ingredients
- 2 large eggplants
- 3 cloves garlic, crushed
- 2 tbsps tahini
- 60ml lemon juice
- 2 tbsps olive oil
- 1⁄2 tsp sweet paprika
Method
Step 1
Pierce eggplants all over with fork or skewer, place on oiled oven tray, under preheated grill about 30 minutes or until skin blackens and eggplant is soft, turning occasionally. Stand for 15 minutes.
Step 2
Peel eggplants, discard skin, drain eggplants in colander 10 minutes, then bland or process with remaining ingredients.
