Baby New Potatoes in Horseradish Mayonnaise

Potatoes are best eaten on the day they are cooked. Mayonnaise can be made the day before the picnic.


  • 1 kilo(s) baby new potatoes
  • 1 egg
  • 2 teaspoon(s) white vinegar
  • cup(s) olive oil
  • cup(s) horseradish cream


Step 1

Boil or steam potatoes until just tender, drain and refresh under cold water. Drain potatoes again and refrigerate until ready to mix with mayonnaise over potatoes. Top with sliced roasted nuts or gherkins.

Step 2

Beat egg and vinegar in a blender, add oil very slowly, beating constantly until thick. Stir in horseradish. Pour mayonnaise over potatoes.
