Bacon & Avocado Salad2017-03-28

- 1 tbsp olive oil
- 150g Garfunkels streaky bacon
- 2 ripe avocados, chopped into chunks
- 150g mixed lettuce leaves
- salt and freshly ground black pepper to taste
Heat 1 tbsp olive oil in a frying pan and cook 150g streaky bacon until crispy. Set aside to cool and then chop into small pieces. Slice two ripe avocado into chunks. Place 150g mixed lettuce leaves on a plate.
Top with avocado slices and bacon pieces. Sprinkle over 2 tbsps toasted pine nut and drizzle with balsamic vinegar. Season with salt and freshly ground black pepper and serve.
