Bacon, Feta & Courgette Bake2018-04-25

Light, cheesy and packed full of avour, this tasty courgette bake recipe is surprisingly lling. Serve with the rocket and Parmesan Salad.
- 6 eggs, lightly whisked
- 1/4 cup olive oil
- 1 cup flour
- 1 tsp baking powder
- 3/4 tsp salt
- 2 courgettes, grated
- 1⁄2 onion, grated or finely diced
- 400g shoulder or streaky bacon, diced 2cm
- 1 cup Cheddar cheese, grated
- 100g feta, crumbled
- 100g cream cheese
Preheat oven to 200°C. Grease a baking dish (measuring about 28 x 22cm). Line an oven tray with baking paper. Bring a medium pot of salted water to the boil.
In a large bowl, whisk eggs, olive oil, flour, baking powder and salt until smooth.
Fold through all remaining courgette, cheeses and bacon bake ingredients, season with pepper and mix until combined.
Pour into prepared baking dish and bake, in middle of oven, for about 30 minutes, until set in the middle (insert a skewer or knife to test, it will come out clean when cooked through). Rotate dish halfway to ensure even cooking and allow to sit for 5 minutes when finished baking.
Slice bacon, feta and courgette bake into pieces to serve.
