Bacon & Mozzarella Omelette2016-08-29

- 4 eggs
- 1⁄2 cup mozzarella cheese, finely cubed
- 4 rashers streaky bacon
- 1 tbsp butter
- 2 tbsps spring onion, chopped
Fry the bacon in a pan until crispy. Set aside.
In a medium bowl, whisk the eggs, add the cheese and spring onions and whisk lightly to combine.
In a frying pan, heat the butter. Add the egg mixture to the pan and cook for about 3 minutes or to your desired preference. Add the bacon over one side of the eggs, and flip over the other side. Remove from heat and sprinkle over chopped spring onions and basil.
