Bacon & New Potato Salad

Ingredients
- 500g new potatoes
- 1 tbsp oil
- salt, to taste
- 250g streaky bacon
- 1⁄2 sliced onion
- 100g rocket
- Dressing:
- 1 tbsp wholegrain mustard
- 1 tbsps red wine vinegar
- 1 tbsp oil
Method
Step 1
Heat the oven to 220°C. Place 500g new potatoes in a roasting tin, then rub with 1 tbsp oil and a sprinkling of salt. Roast for 40 minutes until the potatoes are cooked through. Leave to cool slightly. Heat a non-stick frying pan.
Step 2
Dry-fry 250g streaky bacon until crisp. To make a dressing, whisk 1 tbsp wholegrain mustard, 1 tbsps red wine vinegar and 1 tbsp oil with a splash of water. Place potatoes, 1⁄2 sliced onion and bacon in a large bowl with 100g rocket, pour over the dressing, then toss well and serve.
