- 400g Spirale Pasta
- 250g streaky bacon
- 1 tomato, diced
- 200g Cheddar cheese, grated
- 50g Parmesan cheese, grated
- fresh parsley, chopped, for serving
Cook 400g pasta according to package directions, stopping 2 minutes early so they are still firm enough to hold their shape in the oven. Drain and set aside.
Fry 250g streaky bacon in olive oil until crisp. Chop bacon into small pieces. Preheat the oven to 180°C.
Toss the cooked pasta and bacon with 1 diced tomato, 100g grated Cheddar cheese. Transfer to a greased 9x13 inch baking dish, top with another 100g grated Cheddar cheese and 50g grated Parmesan cheese. Cover with greased foil and bake for 15-20 minutes or until the cheese is melted.
Sprinkle with fresh chopped parsley and let stand a few minutes before serving.
