Bacon & Pea Soup2014-11-25

- 4 bacon slices
- 50g butter
- 1 large onion, finely chopped
- 1 celery stalk, thinly sliced
- 2 litres chicken stock
- 150g frozen peas
- 2 tbsp chopped parsley
Trim the rind and excess fat from the bacon and chop into small pieces
Melt the butter in a large heavy-based saucepan and cook the bacon, onion and celery over low heat for 5 minutes, stirring occasionally.
Add the stock and peas and simmer, covered, for 5 minutes.
Add the chopped parsley and season to taste, just before serving. Serve with crunchy croutons.
