Bacon Potato Bake

  • 250g streaky bacon, chopped
  • 1 kg potatoes, peeled and sliced
  • 250ml cream
  • 100g grated Kefalotiri
  • salt and pepper, to taste


Step 1

Preheat oven to 190°C. Heat a frying pan over medium heat. Cook the 250g chopped bacon until lightly golden. Remove from pan and drain on paper towels. Put 1 kg potatoes, peeled and sliced, in a large bowl. Toss with salt and pepper then layer 1⁄3 of potatoes in bottom of a baking dish.

Step 2

Cover with a sprinkle of bacon. Layer another 1⁄3 of potatoes, another layer of bacon, then final layer of potatoes. Pour 250ml of cream over potatoes.

Step 3

Place the dish in the oven and bake for 60 minutes, pull out of the oven and sprinkle over 100g grated Kefalotiri. Return to oven and continue to bake for another 20 minutes or until top is golden brown.
