Bacon Wrapped Butternut

Ingredients
- 1⁄2 large butternut
- 250g streaky bacon
- 125g brown sugar
- 1⁄2 tsp chilli powder
- 1⁄4 tsp garlic powder
- 1⁄4 tsp salt
- SAUCE
- 2 tbsps plus 11⁄2 tsps Dijon mustard
- 2 tbsps honey
- 1 tbsp fresh sage, chopped
- 3 tbsps mayonnaise
Method
Step 1
Preheat oven to 220°C.
Step 2
Peel, de-seed and cut the butternut into wedges.
Step 3
Stack 4-5 bacon slices and slice them in half lengthwise. Continue with remaining bacon.
Step 4
In a shallow bowl or platter, mix together the brown sugar, chilli powder, garlic powder and salt. Dredge each thin slice of bacon in the brown sugar mixture then wrap around a butternut wedge. Place on a parchment-lined baking sheet, sides not touching. Bake for 25 minutes or until the bacon is crisped and the butternut is fork-tender.
Step 5
For the sauce, mix all the ingredients with a whisk and serve with the butternut.
