Baked Hake in Fresh Tomato Sauce

Ingredients
- 5 tomatoes, roughly chopped
- 2 tbsps olive oil
- 1 tsp garlic, finely chopped
- 1⁄4 tsp salt
- Freshly ground black pepper
- Handful fresh basil
- 6 hake fillets, sliced
- 100g kalamata olives, pitted
- A few thin slices of lemon
- Sprigs of fresh rosemary
- Salt and freshly ground pepper
Method
Step 1
Preheat oven to 200°C.
Step 2
To make the tomato sauce, heat up the olive oil in a pan and add the tomatoes, garlic, salt and pepper and let it cook for 10 minutes. Add the fresh basil and purée the tomato mixture.
Step 3
Spoon a thick layer of the tomato sauce into a frying pan or a baking pan. Add the fish, lemon slices, olives, and rosemary. Sprinkle with salt and pepper. Bake for about 15 minutes until the fish is cooked through.
