Beef, Butternut & Green Bean Curry2015-05-05

- 1 tablespoon cooking oil
- 1 onion, chopped
- 1⁄2 green pepper, chopped
- 1 tablespoon Rajah Mild & Spicy Curry Powder
- 1 tomato, chopped
- 400g beef chunk, cubed
- 1 kg butternut, peeled and cube
- 11⁄2 cups water
- 1 Royco Beef Cube
- 1 handful green beans, chopped
Heat the oil in a large pot and fry the onion and green pepper until soft.
Add the Rajah Mild & Spicy Curry Powder and tomato, and fry for 2 minutes.
Add the beef chunk and fry until well browned.
Add the butternut, water and Royco Beef Cube, stir well and bring to the boil.
Simmer for 30 minutes with the lid on, stirring occasionally or until the meat and vegetables are tender.
Serve with rice / sadza.
