Beef Madras Curry

Ingredients
- 2 tbsps ground coriander
- 1 tbsp ground cumin
- 1 tsp turmeric
- 1⁄2 tsp freshly ground black pepper
- 1 tsp chilli powder
- 2 garlic cloves, crushed
- 2 tsps ginger, grated
- 21⁄2 tbsps lemon juice
- 2 tbsps olive oil
- 1kg stewing steak, cut into 21⁄2cm cubes
- 2 tbsps tomato paste
- 250ml beef stock
Method
Step 1
Combine the spices, garlic, ginger and lemon juice in a bowl to form a paste. Set aside. Heat the oil in a pan over high heat. Add the beef. Cook, stirring, for 2 to 3 minutes, or until browned.Transfer to a bowl.
Step 2
Reduce the heat and add the spice paste. Cook for 1 minute. Return the beef to the pan and cook, stirring, for 1 minute, or until meat is coated with the paste. Add the tomato paste and stock. Bring to the boil. Reduce the heat to low. Cover and cook for 1 hour 15 minutes, or until beef is tender.
Step 3
Remove the lid and cook,uncovered,for a further 15 minutes,or until sauce has reduced and thickened slightly. Sprinkle with fresh coriander and serve with rice.
