Ingredients
- 400g flank steak, sliced
- salt and freshly ground black pepper
- 1 tbsps olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 400ml chicken stock
- 400ml vegetable stock
- 2 tbsps soy sauce
- 400g egg noodles
- 2 eggs, boiled, halved
- 8 spring onions, chopped
- 2 tbsps sesame oil
Method
Step 1
Sprinkle steak with 1⁄2 teaspoon each salt and pepper. Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Cook steak 3 to 4 minutes, or until browned. Remove from pan and let rest.
Step 2
Add the onion and garlic to pan. Sauté 3 minutes until browned and tender.
Step 3
Pour in the stock and soy sauce. Simmer 15 minutes. Add noodles and let stand 2 minutes or until softened.
Step 4
Divide the noodle soup evenly between serving bowls. Top with steak, eggs, and spring onion. Drizzle with sesame oil.
