These beef tacos are easy for mid-week, and tasty enough to please everyone! Top with guacamole for a real treat.
Ingredients
- 1 tablespoon Olive Oil
- 2 teaspoon Ground Cumin
- 2 teaspoon Ground Coriander
- 1 teaspoon Paprika
- 1/4 teaspoon Cayenne Pepper
- 500 grams Beef Mince
- 400 grams Can Chopped Tomatoes
- Taco Shells
- 2 Large Iceberg Lettuce, leaves, Shredded
- 1 Onion, Finely Chopped
- 2 Tomatoes Chopped
- 1 1/2 cups Cheddar Cheese, Grated
- 100 grams Pickled Jalapenos
- 150 grams Cucumber Choped
Method
Step 1
Preheat oven to 180°C. Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring, for 3 minutes or until softened. Add cumin, coriander, paprika and cayenne pepper. Cook, stirring, for 30 seconds or until fragrant. Add mince. Cook, stirring with a wooden spoon to break up mince, for 8 minutes or until browned. Add chopped tomato and stir. Cook, stirring occasionally, for 5 minutes or until sauce has thickened.
Step 2
Meanwhile, heat taco shells in moderate oven for 3-5 minutes. Divide beef mixture and salad tacos evenly between taco shells. Top with lettuce, chopped tomato, cucumber, jalapenos and cheese. Serve.
