Kebabs are quick to cook, easy to marinate and also economical if threaded with extra seasonal vegetables. For parties, make mini versions of these, just thread one or two pieces per skewer.
- 1/3 cup beer
- 2/3 lime, juiced and rind finely grated
- 26 King Prawns, cleaned and deveined
- 1 1/3 teaspoons honey
- 2/3 tablespoon soy sauce
- 1 1/3 tablespoons olive oil
- 1 spring onion, finely chopped
- small red chillies, finely sliced
- garlic cloves, crushed
Combine beer, lime rind and juice, garlic and chilli in a shallow container. Thread prawns on skewers and turn to coat well in marinade. Refrigerate for 30 minutes. Stir honey and soy sauce together and set aside.
Preheat braai or grill to moderate. Remove prawn skewers from marinade and brush with oil. Cook skewers for 3 minutes each side or until prawns change colour. Transfer to a serving platter. Drizzle soy mixture over prawns. Serve immediately.
