Beetroot & Orange Salad

Ingredients
- 250g fresh beetroot
- 2 oranges
- 2 cups mixed baby lettuce leaves
- 1⁄2 cup feta cheese, crumbled
- 2 tbsps pomegranate seeds
- 2 tbsps lime juice
Method
Step 1
Wash and boil the beetroot whole with their skins, until tender (about 40 minutes in saucepan, 10 minutes in a pressure cooker). Check to see if done with a fork. Cool, peel and cut into wedges.
Step 2
Peel oranges and divide into segments, removing the skin.
Step 3
Place half of the lettuce leaves on two plates. Arrange the beetroot and oranges over the lettuce.
Step 4
Sprinkle over the feta, pomegranate and lime juice.
Step 5
Top with remaining lettuce and serve.
