Berry Gin Cocktail

This cocktail calls for a celebration. Bottoms up!
Ingredients
- 44ml gin
- 2 tsps fresh lemon juice
- 30ml soda water
- 40ml raspberry simple syrup
- ice cubes
- rosemary sprigs, for garnish
- mulberries or raspberries for garnish
- For the simple syrup
- 150g sugar
- 190g raspberries
- 190ml water
Method
Step 1
To make the simple syrup, stir together sugar, water and the raspberries in a small saucepan. Bring to a simmer over medium heat. When the first bubbles appear, reduce heat to medium-low and gently simmer 5 minutes. Let cool, then strain.
Step 2
Pour all cocktail ingredients in a cocktail shaker with ice. Shake well, and serve with one or two ice cubes. Add rosemary and berry garnish and serve, either in small shot glasses or in a large tumbler.
