Berry Jam Tart

  • 250g berry jam
  • Pastry:
  • 500g plain flour
  • 75g sugar
  • 1 tsp baking powder
  • 1⁄4 tsp salt
  • 150g butter, cubed
  • 1 egg
  • 1 egg yolk
  • 1 tsp lemon rind, grated


Step 1

In bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender, add in the butter until in coarse crumbs.

Step 2

In small bowl, beat together the egg, egg yolk and lemon rind. Using a fork, stir into crumbs to form dough. Press together. Divide in half.

Step 3

Press slightly more than half of the pastry over the bottom and up side of 23 cm tart pan with a removable base. Spread with the jam. Wrap the remaining pastry in a plastic wrap; refrigerate the pastry and tart shell until firm, about 30 minutes.

Step 4

On a lightly floured surface, roll out the remaining pastry until about 1⁄2cm thick. Cut out star shapes with a star cutter. Place the stars over the top of the jam so that they are overlapping slightly.

Step 5

Bake in centre of 180°C oven until pastry is golden, about 45 minutes. Let cool on rack. Dust over icing sugar and serve.
