Berrylicious Boozy Jelly Squares

Serve on a tray filled with ice so the jellies don’t melt in the hot summer sun. If you don’t fancy vodka, replace with another white spirit of your choice.

Ingredients

  • 200 grams sugar
  • 700 mL berry fruit juice
  • 6 sheets leaf gelatin (or, if using powdered, use 5 tsp)
  • 259 mL vodka

Method

Step 1

In a small saucepan, add the sugar and 300ml of fruit juice. Stir over a low heat until dissolved (but not boiling). Remove from the heat.

Step 2

Soak the gelatin leaves in about 2 – 3 cups of cold water. Allow to stand for a few minutes until the sheets are completely softened. (If using gelatin powder, sprinkle over 100ml cold water. Allow to stand until the gelatin has absorbed the water. Place in a pan of hot water for a few minutes until it melts, then add to the fruit juice).

Step 3

Remove the gelatin leaves and squeeze out any excess liquid, then add to the warm fruit juice and sugar mixture, and stir until the sheets have completely dissolved.

Step 4

Add this to the remaining fruit juice in a large bowl. Stir in the vodka.

Step 5

Refrigerate for 4-5 hours until set.

Step 6

To remove, turn out the jelly onto a board, remove the cling film and cut into squares (depending on the size of your spoons, the cubes will vary), 5 x 5 makes 20 squares.

Step 7

Serve the vodka berry squares on spoons laid on a tray of ice.
