A delicious and simple breakfast.
- 250g Plain flour
- 2 tsp baking powder
- 1⁄2 tsp salt
- 6 eggs
- 250ml cream
- 250ml milk
- 200g butter, melted and cooled
In a large bowl, combine the flour, baking powder and salt. Whisk the milk, egg yolks and butter; stir into dry ingredients just until moistened. Fold in blueberries.
In a small bowl, beat egg whites until stiff peaks form; fold into batter.
Preheat the waffle iron on a medium heat.
Put a medium ladleful of the batter mixture in the waffle iron, making sure not to overfill. Cook each waffle until golden-brown.
