Butter Bean and Corn Salad2016-02-25

- 1 lemon, juiced
- 1 tbsp rice vinegar
- 1 tbsp olive oil
- 1 sweetcorn, kernels removed
- 2 spring onions, chopped
- 1 cup Probrands Butter Beans, rinsed
- 2 tbsps chives, chopped
- salt and ground black pepper to taste
Soak overnight, drain and boil the Probrands Butter Beans until tender, about 30 minutes.
Whisk lemon juice, rice vinegar, and olive oil in a large bowl until smooth. Stir in corn kernels, spring onions, and Probrands Butter Beans. Season with salt and pepper and serve.
