Ingredients
- 2 medium butternut, cubed
- 2 medium potatoes, cubed
- 2 large onions, diced
- 2 cloves garlic, crushed
- 1 tbsp cumin
- 1 tsp mild curry powder
- 1⁄2 tsp freshly grated ginger
- 1.5 litres vegetable stock
Method
Step 1
Sauté onions, ginger, garlic, cumin and curry powder in a little oil.
Step 2
Add butternut and potatoes and let them sweat for a while, approx 10 minutes then add stock and simmer until butternut and potatoes are soft.
Step 3
Purée until smooth.
Step 4
Add a large dash of milk then salt and pepper to taste. Garnish with roasted pumpkin seeds and fresh cream.
