Carrot & Hummus Roll Ups

Ingredients

  • 250g chickpeas
  • 3 tbsps tahini
  • 4-5 tbsps olive oil
  • 1⁄2 lemon, juiced
  • 1 garlic clove, finely chopped
  • 1 tsp cumin
  • Sea salt, to taste
  • Paprika, to taste
  • 2-3 carrot
  • 1 bunch watercress

Method

Step 1

To make the hummus, add the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, paprika and salt into a blender and blend until smooth and thick.

Step 2

Grate the carrot into thin slices with a veggie peeler. Add about 1⁄2 teaspoon of hummus and a few sprigs of watercress to each carrot piece, making sure there is some hummus at each end. Gently roll the carrot pieces, applying a little pressure to make sure they stick.

Step 3

Serve garnished with paprika and a bit of freshly squeezed lemon juice.
