Carrot & Nut Muffins

These are a classic mix of pecan nuts and carrots; earthy and delicious! make them and watch them disappear.

Ingredients

  • 1 1/2 cup(s) Cake Flour
  • 2 teaspoon(s) Baking Powder
  • 1/4 teaspoon(s) salt
  • 3/4 cup(s) milk
  • 1 cup(s) carrots, grated
  • 1/2 cup(s) pecan nuts
  • 1/2 teaspoon(s) cinnamon
  • 1 egg
  • 1/2 cup(s) granulated sugar
  • 2 tablespoon(s) vegetable oil

Method

Step 1

Preheat the oven to 180 ˚C. In a medium bowl, mix flour, baking powder, cinnamon and salt. Beat egg until light and fluffy. Then mix in sugar, milk and oil together. Stir in carrots and chopped pecan nuts. (Carrots can be hand grated or blended.)

Step 2

Gradually add flour mixture to carrot mixture and mix lightly. Grease muffin pans. Fill them three-quarters with the muffin mix.

Step 3

Bake for approximately 15 to 20 minutes. Remove and let cool for approximately 10 to 15 minutes.

Step 4

When cool, decorate and ice the muffins with piped cream cheese and chopped pecan nuts.
