- 1 cup(s) cashews, toasted
- 300 grams bunch fresh coriander
- 1 cup(s) firmly packed fresh mint leaves
- 60 mL lime juice
- 2/3 cup(s) olive oil
Blend or process cashews, coriander, mint and juice until well combined.
With motor operating, gradually pour in oil; process until thick.
