Cauliflower Hummus

  • 600g cauliflower, cut into large florets
  • 11/2 tbsps olive oil, plus 160ml, plus extra to drizzle
  • 2 tsps cumin powder
  • 2 garlic cloves, chopped
  • 80ml tahini
  • 60ml lemon juice
  • 60m warm water
  • paprika, to serve


Step 1

Preheat oven to 200°C. Place the cauliflower on a baking tray and drizzle with oil. Sprinkle with cumin. Roast for 25 minutes or until tender. Set aside to cool slightly.

Step 2

Transfer the cauliflower mixture to a food processor. Add garlic, tahini, lemon juice, extra oil and water. Process until smooth. Serve drizzled with olive oil and sprinkled with smoked paprika, roasted pine nuts and pumpkin seeds.
