Ingredients
- 560g split peas
- 1 onion, peeled and chopped
- 1 head of cauliflower, cut into small florets
- 2 celery stalks, chopped
- 1⁄4 tsp rosemary
- 1⁄4 tsp of thyme
- 1⁄4 tsp oregano
- pinch of sea salt and freshly ground black pepper
- fresh cream to serve
Method
Step 1
In a large soup pot, put 5 cups of water and bring to a boil over high heat. Add the split peas, onion, cauliflower, celery and herbs. Stir and bring to a boil again.
Step 2
Reduce the heat and simmer, uncovered, until the peas and vegetables are tender, about an hour. Add a blender and blend until smooth. Return it to the soup pot and mix well. Season to taste with salt and pepper and serve with toasted ciabatta, fresh cream and garnish with pea shoots.
