Chargrilled Asparagus and Prosciutto with a Balsamic Reduction

A healthy recipe ideal as a side dish.
Ingredients
- 5 asparagus spears, woody ends removed
- 2 tbsp olive oil
- salt and freshly ground black pepper
- 4 tbsp balsamic vinegar
- 2 tbsp parmesan shavings, to garnish
- 3 slices prosciutto
Method
Step 1
Coat the asparagus in the oil and season well with salt and freshly ground black pepper. Cook in a hot griddle pan for 5-7 minutes, turning frequently, or until tender.
Step 2
Lay out the ham slices side-by-side, and pile the asparagus horizontally at one end before rolling up in the ham and placing back in the pan for 2-3 minutes, or until the ham is golden-brown and crisp. Set aside on a warm plate.
Step 3
Pour the balsamic vinegar into the pan used to cook the asparagus, scraping any browned bits at the bottom of the pan with a wooden spoon. Cook for 1-2 minutes, or until reduced and sticky.
Step 4
To serve, spoon the balsamic reduction over the asparagus and garnish with parmesan shavings.
