- 20 large flat mushrooms
- 250g bacon, cooked and chopped
- 250g cream cheese
- 60g Parmesan cheese, grated
- 60g mozzarella cheese, grated
- 250g bread crumbs
- 1 tbsp chilli sauce
- 2 tbsps mayonnaise
- 2 tbsps fresh mixed herbs, finely chopped
- 1 tsp freshly ground black pepper
- 1⁄2 tsp salt
With a dry cloth, clean the mushrooms of any debris or dirt. Remove the centre stem. Make a small slice off the bottom of the mushroom so that it can sit flat.
In a mixing bowl, combine all of the above ingredients and mix until thoroughly incorporated. With a tablespoon, fill each of the mushroom caps with the bacon mixture.
Set the stuffed mushroom caps on a greased, lined baking tray. Bake at 180°C for 10-12 minutes, until the mushroom is cooked and the top becomes brown. Sprinkle with extra herbs and Parmesan to garnish.
