Muffins at dinner time are a nice change from serving bread.
Ingredients
- 1 1/2 cup(s) Cake Flour
- 1 tablespoon(s) Baking Powder
- 1/4 teaspoon(s) Salt
- 1 teaspoon(s) Dry Mustard
- 3/4 cup(s) Cheddar Cheese, grated
- 1/4 cup(s) Feta Cheese, in chunks
- 1 tablespoon(s) Chopped fresh basil
- 1 teaspoon(s) Sugar
- 1/4 cup(s) Vegetable Oil
- 1 Large Egg, lightly beaten
- 1/3 cup(s) Milk
- 1/3 cup(s) Water
Method
Step 1
Preheat oven to 200°C.
Step 2
Grease a 12 cup muffin tin. In a medium bowl, combine the all purpose flour, baking powder, salt, dry mustard, basil, cheddar cheese, feta and sugar.
Step 3
In a small bowl, mix together the vegetable oil, egg, milk, and water. Add liquid ingredients to the bowl of dry ingredients. Make sure not to over mix everything.
Step 4
Fill each muffin cup 2/3 full with the batter.
Step 5
Bake for 15-18 minutes or until golden brown.
Step 6
Let the muffins cool in the muffin tin for about 10 minutes. Lift muffins out with a spoon and serve with butter.
