Cheesy Hasselback Chicken2017-09-29

- 6 chicken breasts
- 400g Cheddar cheese, sliced
- 3 tomatoes, sliced
- 1 tbsp Italian seasoning
- salt and freshly ground black pepper
- 2 tsps olive oil
Preheat the oven to 200°C. Place the chicken breasts on a cutting board. Using a sharp knife, cut slits across the chicken breast about 3⁄4 of the way through being careful not to cut all the way through. Stuff each slit with a slice of cheese and a slice of tomato.
Place the chicken breasts in a baking dish that has been coated with non-stick baking spray. Brush each chicken breast with olive oil and sprinkle with salt, pepper and Italian seasoning.
Bake in the oven for 30 minutes or until the chicken is cooked through. Serve with a fresh salad.
