Cheesy Potato Bake2016-02-25

This side dish satisfies hearty appetites and pairs well with any roast.
- 1 garlic clove
- 1.2kg potatoes, peeled
- 1 cup cream
- 2/3 cup cheddar cheese, grated
- salt and freshly ground pepper, to season
- 2 tbsps fresh parsley, chopped
Preheat oven to 160°C. Lightly grease a 2 litre capacity baking dish with butter.
Rub the cut side of a halved garlic clove around the base and side of the dish. Thinly slice the potatoes crossways.
Arrange a layer of potato slices over the base of the dish, overlapping slightly. Drizzle over cream and sprinkle with 2 tablespoons cheddar cheese. Season with salt and pepper. Repeat to make 3 more layers, finishing with a layer of cheese.
Bake in oven for 1-11⁄4 hours or until the potato is tender and the top is golden. Set aside for 10 minutes to stand. Sprinkle with parsley.
