Cherry Tomato Tart Slices

This is a simple snacks to make, but totally delicious and perfect pairing with a boozy tipple.

Ingredients

  • 150 grams roll of puff pastry
  • 125 grams cherry tomatoes
  • 60 grams pesto – basil or coriander
  • 1/2 egg, beaten
  • salt and pepper

Method

Step 1

Preheat the oven to 200°C fan/gas 6.

Step 2

Roll out the puff pastry (if it comes in a block) to a rectangle, approximately 35cm x 25cm.

Step 3

Make a small indent with a knife, around the rectangle making a border of about 1.5cm. You will now have a smaller rectangle within the pastry.

Step 4

Spread the pesto over this smaller area, as evenly as possible.

Step 5

Cut the cherry tomatoes in half and scatter over the pastry. Drizzle with a little olive oil and salt and pepper.

Step 6

Brush the border edge of the pastry with the beaten egg yolk, then place in the hot oven.

Step 7

Bake for 20 minutes until the pastry border is golden and the tomatoes are softened.

Step 8

Remove from the oven and allow to cool. Cut into small squares and serve.
