Chicken Alfredo

  • 340g fettuccine pasta
  • 5 tbsps of butter
  • 4 chicken breasts
  • 250ml of cream
  • 2 pinches of nutmeg
  • 100g grated Parmesan
  • salt and pepper, to taste
  • parsley, finely chopped


Step 1

Boil 340g fettuccine pasta until al dente. Strain, and toss with a splash of oil. Heat a large pan over medium heat, and add 2 tbsps of butter. Add 4 chicken breasts and cook both sides until browned and cooked through. Set aside.

Step 2

Reduce the heat to medium, and add another 3 tbsps butter. Whisk in 250ml of cream and 2 pinches of nutmeg. Bring to a simmer, then cook for 2 minutes. Whisk 100g grated Parmesan into the sauce.

Step 3

Add the sliced and cooked chicken breast, pasta and toss to combine. Season with salt and pepper and garnish with finely chopped parsley.
