Chicken & Avo Smash Bowl

Ingredients
- 2 chicken breasts
- 1 tbsp olive oil
- salt and freshly ground back pepper
- 200g quinoa, cooked
- 50g rocket
- 1 ripe avocado, roughly chopped
- 1/2 tsp lemon juice
- 1/2 clove garlic peeled and minced
- pinch of salt and pepper
- 70g red cabbage, sliced
- 8 cherry tomatoes, sliced
- 3 radishes, sliced
- 100g cucumber, sliced
- Lemon vinaigrette:
- juice of 2 lemons
- 100ml olive oil
- 1⁄4 tsp dried oregano
- salt and pepper to taste
Method
Step 1
Heat the olive oil in a pan to medium-high. Season the chicken breasts with salt and pepper and cook until no longer pink and cooked through, about 5 minutes each side. Set aside and let it cool. Slice into strips. Make the vinaigrette by whisking all of the vinaigrette ingredients together.
Step 2
Place the chopped avocado in a bowl with the lemon juice, garlic, salt and pepper. Mash together roughly with a fork.
Step 3
Place the cooked quinoa in a serving bowl. Arrange the cabbage, sliced chicken, mashed avocado, radishes, cherry tomatoes and cucumber. Top with rocket leave and sprinkle with sesame seeds before serving with the vinaigrette.
