Chicken Curry with Butternut

Ingredients
- 1 tablespoon cooking oil
- 1 onion, chopped
- 1⁄2 green pepper, chopped   
- 2 tablespoons Mild & Spicy Curry Powder   
- 1 tomato, chopped   
- 500g mixed chicken pieces   
- 2 carrots, chopped   
- 250g butternut, peeled and cubed   
- 1 Chicken Stock Cube   
- 2 cups water
- 1 tablespoon Tasty Brown Onion Soup with Mixed Herbs
Method
Step 1
In a pot, brown the onion and green pepper in oil until soft.
Step 2
Add the curry powder and tomato fry for 2 minutes. Add the chicken pieces and fry for 5 minutes or until well browned. Add the carrots, butternut, stock cube and water, stir well and bring to the boil.
Step 3
Turn down the heat and simmer for 30 minutes with the lid on.
Step 4
Just before serving, mix the tasty Brown Onion with Mixed Herbs with 4 tablespoons of water to form a smooth paste, add it to the pot and allow to simmer for 5 minutes to thicken.
Step 5
Serve with rice or sadza.
