Ingredients
- 400g chicken breast
- 2 mixed peppers
- 1 red onion
- Garlic
- Chilli powder
- Coriander
- Cumin
- Lime juice
- 2 tbsp oil
- Salt and black pepper, to taste
Method
Step 1
Place some garlic, chilli powder, coriander, cumin, lime juice, and 2 tbsps of oil in a shal- low baking dish and whisk to combine. Add 400g chicken breasts and marinade in the fridge for up to 24 hours. Heat a grill pan to medium.
Step 2
Add the chicken and cook until well browned, about 10 minutes each side. Remove the chicken to a cutting board and let it rest. Slice 2 mixed peppers and 1 red onion and place in a medium bowl, drizzle oil, season with salt and pepper, and toss to coat.
Step 3
Place the vegetables on the grill pan and cook, stirring occasionally, until tender and slightly charred, about 10 minutes. Slice the chicken against the grain and place in a serving dish with the vegetables. Serve with warm tortillas.
