Ingredients
- 1 tbsp olive oil
- 2 chicken breasts, cut into 2.5cm pieces
- 1 onion, chopped
- 4 cups chicken stock
- 2 cups water
- 3 carrots, julienne
- 2 cups broccoli florets
- 11⁄2 cups uncooked egg noodles
- 1⁄2 tsp garlic-pepper blend
Method
Step 1
In a large saucepan, heat the oil over medium heat. Add the chicken and cook for 4 to 6 minutes, stirring occasionally, until no longer pink in the centre. Stir in the onion. Cook 2 to 3 minutes, stirring occasionally, until onion is tender.
Step 2
Stir in the stock, water and carrots. Bring to the boil and cook for 5 minutes over medium heat. Stir in the broccoli, noodles and garlic-pepper blend. Bring to the boil; reduce heat. Simmer uncovered for 8 to 10 minutes, stirring occasionally, until the vegetables and noodles are tender.
