Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- cloves garlic
- 1/2 tsp curry powder
- 1⁄4 tsp coriander
- 1⁄4 tsp turmeric
- 400g chicken breasts, sliced
- mixed sliced vegetables such as peppers, carrot and baby marrow
- 4 pita bread
- Fresh salad such as sliced cherry tomatoes, cucumber and lettuce
Method
Step 1
Heat 1 tbsp of olive oil in a frying pan. Fry some garlic and 1 chopped onion with 1⁄2 tsp curry powder, 1⁄4 coriander and 1⁄4 turmeric until onions are soft. Add 400g sliced chicken breasts and cook for 5-7 minutes.
Step 2
Add some mixed sliced vegetables such as peppers, carrot and baby marrow. Stir fry until chicken is cooked through and the vegetables are tender.
Step 3
Toast 4 pita bread and halve them. Stuff the pita with the chicken mixture. Add some fresh salad ingredients such as sliced cherry tomatoes, cucumber and lettuce. Serve.
