KEBABS are quick to cook, easy to marinate and also economical if threaded with extra seasonal vegetables. For parties, make mini versions of these, just thread one or two pieces per skewer.
- 2 tablespoon(s) smooth peanut butter
- cup(s) soy sauce
- 1/2 cup(s) lime juice
- 1 tablespoon(s) brown sugar
- 2 tablespoon(s) curry powder
- 2 cloves garlic, chopped
- 1 teaspoon(s) fish sauce
- 6 skinless chicken breast halves, sliced
In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and fish sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2 hours or overnight.
Preheat a grill to high heat.
Weave the chicken onto skewers, then grill for 5 minutes per side.
Serve in individual shot glasses with a red pepper garnish and corander sprig.
