Ingredients
- CHICKEN MARINADE:
- 1 cup coconut milk
- 4 clove garlic, finely chopped
- 2 tsp curry powder
- 2 tsp brown sugar
- 1 tsp salt
- 1 tsp ground black pepper
- 1kg chicken breasts, cubed
- PEANUT SATAY SAUCE
- 11⁄2 cup coconut milk
- 11⁄2 tbsp curry powder
- 1⁄2 cup smooth peanut butter
- 1 cup chicken stock
- 1⁄4 cup light brown sugar
- 2 tbsp lemon juice
- 11⁄2 tsp soy sauce
- salt to taste
- 20 wooden skewers, soaked in water for 30 minutes.
Method
Step 1
For Marinade: Stir together coconut milk, garlic, curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours or better yet, overnight.
Step 2
For the peanut sauce, bring coconut milk, curry powder, peanut butter, chicken stock, and brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly until smooth and thickened. Remove from heat and stir in lemon juice and soy sauce; season to taste with salt.
Step 3
Preheat grill or frying pan for medium-high heat.
Step 4
Thread marinated chicken onto skewers, and then grill or pan fry for 4 to 5 minutes per side, or until cooked through. Serve with warm peanut sauce.
