Chickpea & Broccoli Wraps with Avocado Sauce

Ingredients
- 6 tortilla wraps
- 1 x 400g can chickpeas, drained
- 1 large head of broccoli, cut into florets
- 3 tbsps olive oil
- 4 cloves of garlic, finely chopped
- 1⁄2 lemon, juiced
- AVOCADO SAUCE
- 1 ripe avocado
- 1⁄2 lemon, juiced
- 1⁄2 tsp salt
- 1 jalapeño, cut into pieces
- 2 tbsps fresh coriander, chopped
- 125ml cold water
- 2 tsps olive oil
- 1 tbsp onion, roughly chopped
Method
Step 1
Heat the oven to 200°C. Place the broccoli, garlic and chickpeas in a large bowl. Add the olive oil and stir until well covered.
Step 2
Put the vegetables in a baking tray and roast for 20 minutes. Squeeze the juice of half the lemon over the vegetables and stir.
Step 3
For the Avocado Sauce: Put the avocado, lemon juice, salt, jalapeño, coriander, water and olive oil and onion in a food processor. Blend till smooth. Season to taste.
Step 4
To assemble the wraps, spread the avocado sauce over the tortillas, then add the chickpeas and broccoli and garnish with fresh parlsey. Roll up and serve!
