Ingredients
- 800g chickpeas
- 2 tbsps olive oil
- 1 tbsp red wine vinegar
- seeds from one pomegranate
- a handful of chopped parsley
- 150g danish feta
Method
Step 1
Add 800g chickpeas, drained and rinsed, in medium mixing bowl and toss with 2 tbsps olive oil and 1 tbsp red wine vinegar.
Step 2
Stir in seeds from one pomegranate, a handful of chopped at leaf parsley and 150g danish feta. Season with salt and pepper.
