This chickpea salad tastes so light and flavourful with fresh herbs and lemon.
- 2 cans chickpeas, drained
- 1 cup red pepper, finely sliced
- 1⁄2 cup spring onions, chopped
- 1 small cucumber, diced
- 2 tsp garlic, crushed
- salt & pepper
- 3 tsp lemon juice
- 1⁄4 cup olive oil
- 1⁄2 cup fresh mint
Mix oil & lemon juice well and set aside.
Combine all other ingredients and toss with the oil and lemon juice mixture.
Chill before serving and serve in individual bowls.
